The important thing is to confirm your hunting ammunition before the season. Changing bullet weight or projectile construction can change point of impact, even when you’re using the same rifle and cartridge.
A good preseason routine is to practice extensively with an appropriate training load, then verify your zero with the exact hunting ammunition you intend to carry.
If you change ammunition, scope settings, rifle configuration, or other important equipment, verify the rifle’s zero again.

The short answer is that they’re generally optimized for accuracy, consistency, and economical shooting rather than terminal performance on game.
