The cartridge was introduced around a 140-grain match bullet, and that weight remains extremely common in factory ammunition today. Hodgdon notes that the original 140-grain A-MAX was eventually replaced by the 140-grain ELD Match.
There’s a good reason the weight has endured.
A quality 140-grain bullet can provide an excellent balance of:

143 Grain 6.5 Creedmoor
143 grain has become particularly familiar among 6.5 Creedmoor hunters.
Hornady’s 143-grain ELD-X is a good example of why. It’s a high-ballistic-coefficient hunting bullet designed to combine aerodynamic performance with hunting-oriented bullet construction. Hodgdon specifically highlights the 143-grain ELD-X as an option for maximizing downrange reach on appropriate hooved game.
The difference between 140 and 143 grains is small enough that the number alone shouldn’t determine your choice.
The actual bullet design matters much more.
A 143-grain hunting bullet and a 140-grain match bullet may behave very differently despite their nearly identical weights because they were built for different purposes.
